"2011" Treat - A great alternative to cookies!
I know after Christmas is done, the last thing I want is more cookies.
But then New Year's comes and you need something yummy to munch on.
So here is a GREAT alternative! It is lighter and tastes much more fresh then a traditional cookie.
Oh. And of course, it is SO SIMPLE to make! Seriously!
I used refrigerated pie crusts for these. Really, I did. What makes these extra special is that I didn't have to make, or roll the dough! I really used refrigerated pie crusts and cut out "2011" using number cookie cutters.
Then I baked the pie crust "cookies" at 350 until the looked done.
For the filling I mixed cream cheese, a bit of vanilla and some powdered sugar together until smooth. This creates a nice creamy texture but isn't as sweet as frosting. I spread the filling on the cookie and added a tiny bit of fresh raspberry preserves on top, and sandwiched two cookies together.
Top with powdered sugar and you have a very light, not overly sweet, perfectly festive treat for your New Year's Celebration!
